Easy Company Chicken


I really thought that this recipe was one that my mom used to make for company, until she came to visit. I served it for dinner and she asked for the recipe. When I told her it was the Country Captain Chicken recipe I'd grown up eating she corrected me and said that it was a combination of 2 of her chicken recipes. Shocker, I'd remembered it just like this. So this is a combination of 2 of my favorite recipes from when I was growing up. Sometimes you just rewrite history.  You can make this on the stovetop or in a crockpot. I prefer to use thighs for this crockpot recipe because you can't overcook them and they don't get all dried out and for company, I don't have to worry about the meat being overdone even if a guest is running late. They're just more forgiving. I don't normally like thigh meat but it is perfect in this recipe

Easy Company Chicken Serves-  4


8 Boneless Skinless Chicken Thighs or 4 boneless skinless breasts (You can also use bone in but take off the skin before throwing it into the pot.
2 cans of Stewed Tomatoes don't drain
1 TBS Curry Powder
Salt and pepper to taste
1 can of medium black olives, drained (Optional)
  • Take the chicken and salt and pepper both sides.
  • Place chicken in the bottom of a crockpot or medium size stock pot
  • Pour the stewed tomatoes over the chcken
  • Sprinkle the curry powder over the top
  • if you like olives dump in the drained olives. 
 Stovetop:- For chicken breasts, bring pot to a boil and then reduce heat to low and simmer for 25 to 30 minutes until the chicken is cooked through. For thighs, bring to a boil then reduce heat to low and simmer for up to 2 hours.

Crockpot- For chicken breasts, set crockpot to low and cook for 5 to 6 hours until the chicken is cooked through. For thighs, set to low and cook for 5 to 9  hours. 



Serve over rice.
Did you catch onto the fact that there are no olives int he photos? I didn't put olives in this batch because it was for a family dinner last night and my daughter isn't an olive fan.

Yummy! This is very similar to a recipe I posted the other day...Boneless chicken breasts, salsa with taco seasoning mixed in dumped on the chicken breasts and cooked in the crockpot...serve with sour cream on top...yummy! :)

My kids won't eat olives or tomatoes but Hubs and I would like this. (Have you ever done this with chicken, salsa, and taco seasoning?)

I need to get out the crockpot again now that it's chilly.
